New Apple Salad
It’s that time again! The first apples are ripe and ready for picking! This salad works best when made with new crop apples like Empire, Spartan or Cortland. You can also substitute Greek yogurt in place of sour cream if you prefer. Makes a great afternoon/after school snack.
- 6-8 Empire Apples diced
- 1 cup cheddar cheese cubed small, about 1/2 cm
- 1 cup walnuts or pecans chopped
- 1 cup celery chopped
- 1 cup sour cream
- 1/2 cup liquid honey
- 2 tablespoons lemon juice
-Prepare the first 4 ingredients and toss together in a bowl
-Combine the remaining ingredients in a small bowl and whisk together
– Pour over apple mixture and stir to coat all ingredients.
