Sometimes I get the craving for a soft and tender chocolate chip muffin, this recipe fits the bill perfectly. Sour cream combines with the traditional ingredients to give these muffins great lift which keeps them tender and moist. This recipe whips up quickly, you could make a batch for an after school snack or to take to friends house for tea in under an hour.
Nothing fancy but I just love how the ingredients combine to create muffin magic. These would also be very easy to customize,swap out the chocolate chips for berries or nuts. The base batter is just so good that any flavor combinations will just highlight the vanilla notes in the batter.
A simply perfect chocolate chip muffin, moist and tender.
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 cup softened butter room temperate
- 3/4 cup sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 cup sour cream
- 1 cup milk chocolate chips
Preheat the oven to 400 degrees. Place liners in 12 muffin cups.
2.Cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
3.Beat in the vanilla.
4.Mix the flour, baking soda, baking powder in a separate bowl.
5.Add the flour mixture to the butter mixture alternately with the sour cream. Begin and end with the flour just until blended. Do not over mix or your muffins will be tough.
6.With a spatula, fold in the chocolate chips. Spoon into muffin cups. Bake for 15-20 minutes, or until a toothpick inserted in center comes out clean.
Careful not to over bake them, they are tender and light muffin and will have a nicely golden on top.
