Delicious Ham and Cheese Chicken was inspired by my families obsession with chicken cordon bleu and their love of poultry in general. My challenge was always getting the chicken breast butterflied and pounded out thin because I did not have a meat tenderizer…..enter the mutli purpose mason jar! I saw a tip once, some where in all my recipe reading that suggested using a glass jar to roll out pie dough and I thought heck! lets try this trick on chicken. Once you have butterflied the breast, use the mason jar on it’s side to “gently” pound out the meat. Just make sure you go slowly as the meat will thin out quickly.
Some of the ingredients in the recipe are available from Epicure a Canadian spice company that sell online or home parties but you can also substitute for spices you may already have on hand.
Once you have all your ingredients prepped this recipes goes together nicely , ready to pop in the oven in minutes! Keep an eye on it, when the rolls are golden brown and the cheese is running out the sides you will want to pull it out and let it set for a few minutes. I added a drizzle of balsamic glaze just to be fancy.
- Filling
- 2 teaspoons minced garlic
- 1 8 ounce pkg softened Cream Cheese
- ½ cups cheddar cheese, shredded
- ¼ cups romano or parmesan cheese, grated
- 1 tablespoon Epicure 3 Onion Seasoning or dried onion flakes
- ¼ teaspoons salt
- ¼ teaspoon black pepper
- 2 eggs
- Breading
- 2 cups flour
- ¼ cup romano or parmesan cheese, grated
- 3 tablespoon fine herbs seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 pounds chicken breasts, boneless or 8 thin sliced chicken breast ( Prime makes them this way)
- 8 individual deli ham slices
- Preheat oven to 400.0 degrees Fahrenheit.
- For Filling:In a bowl, mix together cream cheese, cheddar cheese, Romano cheese, 3 Onion seasoning or dried onion flakes, salt, black pepper and garlic.
- In another bowl, beat together eggs .
- For Breading: In a third bowl, mix together flour, romano cheese and fine herbs salt and pepper.
- Butterfly chicken breasts and pound thinly to about 1/4 inch thick.
- Spread cheese mixture on inside of chicken breast and top with 1 ham slice.
- Roll up chicken breasts.
- Dip each roll in egg mixture, then dip in flour mixture.
- Place seam side down in baking dish. You can use parchment paper to avoid getting cheese burnt to the bottom of your pan.
- Bake at 400 degrees for 40-45 minutes.
- Cool slightly before serving so cheese sets.
