Delicious Ham and Cheese Chicken was inspired by my families obsession with chicken cordon bleu and their love of poultry in general. My challenge was always getting the chicken breast butterflied and pounded out thin because I did not have a meat tenderizer…..enter the mutli purpose mason jar! I saw a tip once, some where in all my recipe reading that suggested using a glass jar to roll out pie dough and I thought heck! lets try this trick on chicken. Once you have butterflied the breast, use the mason jar on it’s side to “gently” pound out the meat. Just make sure you go slowly as the meat will thin out quickly.

Some of the ingredients in the recipe are available from Epicure a Canadian spice company that sell online or home parties but you can also substitute for spices you may already have on hand.

Ham and Cheese ChickenOnce you have all your ingredients prepped this recipes goes together nicely , ready to pop in the oven in minutes! Keep an eye on it,  when the rolls are golden brown and the cheese is running out the sides you will want to pull it out and let it set for a few minutes. I added a drizzle of balsamic glaze just to be fancy.
