I may be a little late to the Watermelon Salad party but now that I am here why not shake things up by adding lentils! I was intrigued by a recipe that was shared by Pulses.org , kudos to them for inspiring new ways to use lentils. If you have never made your own lentils check out this video and get cooking, it is surprisingly simple!

New to Watermelon Salad?

I had shied  away from watermelon salad becuase it tended to include red onion. I am not fond of raw onion and the thought of mixing watermelon and onions makes me cringe. But curiosity got the best me and I just had to try the flavourful combo (minus the onion). This is my take on a bright, juicy salad perfect for a summer potluck or picnic. The lentils add body to the salad as well as a protein and fiber boost.

Looking for another great option for a summer salad? I recommend this classic Nicoise Salad with farm fresh veggies and local eggs!
