Apple Citrus Herb Rice Salad

Looking for a hearty, flavor filled rice salad? This recipe is jam packed with fruits, vegetables and herbs that will layer together for a party in your mouth! Great to take for a potluck or BBQ, make the night before for more intense flavor.

makes 12  3/4 cup servings

– 2 cups cooked wild rice
– 1table spoon vegetable bullion
– 1 table spoon butter
– 3 ½ cups water
Combine in a pot and cook rice till tender about 35 mins or follow package directions for your brand of rice, cool rice and add to a large bowl
While rice is cooking prepare the rest of the salad ingredients
– 1 cup chopped nuts( I used walnuts but pecans or cashews would be great too)
– 1 cup dried berries, like cranberries, dried cherries or dried blue berries
– 2 celery stalks finely chopped
– 2 medium apples cored and diced
– 1/2 cup finely chopped fresh cilantro
– 1 tablespoon finely chopped fresh tarragon
– ¼ cup finely chopped fresh parsley
– Add all the ingredients to cooked cooled rice
– ½ and orange juiced
– 1 lime juiced
– 1/4cup of vegetable oil
– 1table spoon rice wine vinegar
– 2 tablespoons honey mustard
– 1tablespoon sesame ginger dressing seasoning
Whisk to combine all ingredients then add to the bowl with cooled rice and other salad ingredients, toss to combine and serve right away or let flavors develop in refrigerator for a day.
