I may be a little late to the Watermelon Salad party but now that I am here why not shake things up by adding lentils! I was intrigued by a recipe that was shared by Pulses.org , kudos to them for inspiring new ways to use lentils. If you have never made your own lentils check out this video and get cooking, it is surprisingly simple!
New to Watermelon Salad?
I had shied away from watermelon salad becuase it tended to include red onion. I am not fond of raw onion and the thought of mixing watermelon and onions makes me cringe. But curiosity got the best me and I just had to try the flavourful combo (minus the onion).This is my take on a bright, juicy salad perfect for a summer potluck or picnic. The lentils add body to the salad as well as a protein and fiber boost.

A bright, juicy salad perfect for a summer potluck or picnic. The lentils add some body to the salad as well as a protein and fiber boost.
- 6 cups watermelon , cubed
- 1/2 cup dry lentils cooked in 2 cups of water or use 1 cup drained and rinsed canned lentils
- 1/2 cup thinly sliced mint leaves
- 2/3 cup crumbled feta cheese
- 1/4 cup honey
- ½ teaspoon lime zest
- ¼ cup fresh squeezed lime juice
- pinch of salt
- ⅛ teaspoon ground nutmeg or cinnamon
- 1/2 cup vegetable oil

Place 1/2 cup of dry lentils in a medium pot and add 2 cups of water. Bring to a boil and simmer for 10-15 minutes. Strain into a colander and rinse with cold water to cool.Drain well then place in a large bowl.

Cut the watermelon into 1-2 inch cubes and place in bowl with lentils.

Crumble the feta into the bowl with watermelon and lentils.

Wash mint leaves and slice thinly, then sprinkle on top of salad.

In a small mason jar combine the honey, lime peel, lime juice and nutmeg.

Add a pinch of salt and seal the jar with a tight fitting lid.

Shake to mix ingredients,open jar and add the oil to honey mixture. Seal jar and continue shaking till mixture is emulsified and well blended.

Drizzle over the watermelon salad and serve right away.

Salad will keep for about a day but is best served and eaten fresh right away.
